Las Sabias, DO Toro 2018

This very old and extraordinary vineyard in Toro located at over 700m on sandy and pebbly soil planted 45-80 y. ago (some over 100y.). Good wines cannot be rushed. After careful and meticulous work in the vineyard,was select only the best Tinta de Toro grapes that are fermented in concrete and stainless vats. The ageing is also slow and very specific in top quality French barrels, for at least 16 months. Result is a unique wine, intense and deep, with lots of fruit and a great tannic quality frame.
Serve at 13°C. Perfect accompaniment for savoury dishes.
